Chicken Sausage and Saffron Rice

Delicious and quick dinner that uses pantry staples to get healthy food on the table quickly.

Ingredients

  • 4 Chicken and Apple Sausages, sliced into medallions
  • 1Lg Onion, minced
  • 1 Red Bell Pepper, chopped
  • 1 Jalapeno, cored, seeded, and sliced into thin threads
  • 1Qt Grape Tomatoes, halved
  • 1T Garlic paste
  • 1T Sun-Dried Tomato Paste
  • 2-3T Knorr Chicken Broth Powder or 5C Chicken Stock
  • 1T Parsley
  • 1T Chives
  • 1 1LB package Vigo’s Saffron Yellow Rice

Steps

  1. In a large skillet or brazier with a tight fitting lid, saute the sausage on both sides.
  2. Fry onion, bell pepper, jalapeno, and tomatoes until onions are clear and tomatoes begin to char.
  3. Add the garlic paste and sun-dried tomato paste and caramelize.
  4. Deglaze the pan with 5C of Chicken broth or water.
  5. Add the rice, parsley, chives, (and chicken broth powder if using water).
  6. Cover tightly, bring to a boil, and reduce heat to low.
  7. Cook 18-20 minutes until rice is soft.
  8. Enjoy!

Ingredients: 1/4 Stick butter 1/2C AP flour 3/4C room temp milk 3 room temp eggs Salt pepper mace nutmeg allspice etc if you want it Blend it or whisk it until homogeneous  Put a castiron in a cold oven at 425°.  Remove when preheat finishes and melt in a 1\4 stick of butter.   Pour in batter.  Top with parm and fresh herbs.  Cook 15m.
